The conservation of food has been a concern forever. For centuries, man has responded to the need to preserve food . A need that has driven to invent techniques to protect food for longer and better conditions.

It is known that already in ancient civilizations such as China in the s.XI BC ice cream was consumed, a custom that later adopted India and later Persia, Greece until reaching ancient Rome

Thanks to Marco Polo we know how they did it. Snow was lowered from the mountain top, that is, they transported large blocks of ice wrapped in straw, and stored in ditches dug underground, until later consumption, later rooms would be built for the same purpose.

Once the snow became ice, it was divided into transportable pieces, which were directed to the different populations and sold to individuals.

HOW WERE FOOD STORED AT HOME

In the antiquity the foods were conserved with different techniques and furniture made on this purpose. 

Other natural products were used, such as salt, spices and cooking techniques such as marinated and poached, but smaller cold rooms or neveros-like cellars but smaller were also used for home use.

The famous cool rooms ( fresqueras in spanish) were located in the coolest place in the house, like improvised refrigerators. In them the food was kept fresh for longer. But, if it required more time of conservation, the underground cellars were used, where the change of temperature was already considerable.

In this way, our ancestors stored the food, until later what appeared to be the first step towards the current refrigerators.

THE HISTORY OF THE FIRST PROTOTYPES

The refrigerator cabinet was the ancestor most similar to today’s refrigerators. 

A closet with holes, through which fresh air passed. In this way the conservation of the food was greater, but still not enough to avoid diseases related to the decomposition of the products.

In 1550, the Spanish doctor Blas de Villafranca, discovered a substance for the longest preservation of ice, and even increase its freezing power. It was a very common homemade product: salt . This simple and ingenious finding allowed to improve the use of small “ice cabinets”.

In 1750, Willian Cullen invented a very innovative process, by which artificial cooling was produced, called the “cold bag”, this fact produced an important advance for the subsequent creation of the refrigerator.

In 1784 the first machine to cool was created, by Willian Cullen. Later Jacob Perkins, in 1834, manufactured artificial ice for the first time in history .It was a bulky machine, like a closet, inside it was inserted large blocks of ice.

In fact, shortly thereafter in the early 1800s, Thomas Moore created the first domestic refrigerator or ice box, the closest thing to a homemade freezer. They were containers reinforced with metal, zinc or tin and insulated with straw, sawdust or dried seaweed. They had two compartments, one for placing ice and the other for food.

Years later in 1804, the American Oliver Evans designed a first prototype of the refrigerator, but did not manufacture it, which took away the idea of this revolutionary invention. In 1844, a doctor from Florida, John Gorrie perfected it for use with his patients of yellow fever.

But it was not until 1834 when Jacob Perkins invented and manufactured the first modern refrigerator. 

With the invention later in 1855, of the first industrial refrigerating machine by compression of ether, the refrigerator gave a push relevant to the investigation. It was patented by the Scott James Harrison. Already in 1859 the first refrigerator for ammonia compression appeared, was invented by the French Ferdinand Carré. The last improvement was made by Carl Von Linder in 1876, creating a refrigerator for everyday use which earned him the invention of the refrigerator and its patent.

And in 1879 the first domestic refrigerator of mechanical nature went on sale . It was invented and manufactured by the German Karl van Linde. And in 1913, in Chicago, he began selling Domelre, one of the first domestic refrigerators. In 1923 Balzer von Platen and Karl Munters invented the electric refrigerator.

From 1931, manufacturing began at the industrial level, Electrolux in Sweden, Servel and General Electric in the United States, were the pioneers in this sector. General Electric, in 1926 made for the first time a hermetic refrigerator. Later the patent of the Electrolux model was bought by the North American firm Kelvinator, which frabricized it in series two years later.

The invention of freon, a known nonflammable fluid based on fluorine, was very useful not only as an aerosol but also as a refrigerant in refrigerators. In 1932 the refrigerator as we know it acquired its definitive, more modern and practical shape and would spread to every household in the world. And in 1939 Genral Electric launched a refrigerator with two temperatures and two compartments, the so-called “freezer”.
